I wasn't expecting the malic acidity to come through so clearly — it's properly tart, almost like a sour beer, but in a good way. Steeps fast and stays bright pink in the cup even on a second pour.

That vivid pink color when it steeps is honestly half the reason I keep brewing it. The malic acidity gives it a real snap without being harsh, and I've been drinking it iced all week.

The tartness really does hit like a sour beer, that malic acidity is no joke in the best way. I steeped mine a bit long and it got pleasantly sharp, so I'd go shorter next time if you want it milder.
