Mocha. Um clássico de café. O cacau e o café têm muito em comum. Das regiões de cultivo aos processos de transformação, estes parentes genéticos distantes são uma combinação óbvia. Este chocolate é um pouco inverso, onde o chocolate assume o protagonismo com o complemento do café. Com o incrível Monarch Espresso da Onyx envolvido, esta combinação é celestial, como seria de esperar.
I grabbed this to pair with my afternoon espresso and ended up eating the whole bar in one sitting. The mocha note comes through clearly without one flavor overpowering the other.
The coffee and cacao balance is spot on, not overly sweet, and it melts with that slow, even texture I look for in a dark bar. I've already eaten half the bar in one sitting while sipping my morning espresso, and the pairing honestly makes both taste better.
I was a little unsure about the mocha combo, but the coffee and cacao really do balance each other out nicely. The bar is a bit more brittle than I'd like, so you have to break it carefully, though the flavor is spot on for a classic espresso pairing.
