Sammen med faren Pepe brukte de det de hadde lært gjennom utviklingen av Finca El Soledad og tilpasset det til en gård i høyden i en annen region. Gjennom unike utfordringer og prøvelser gir innsatsen en usedvanlig ren og elegant kopp.
The second release from this new planting has a sweetness that carries through the whole cup, and the fact it’s a father-son project makes it feel special. I brewed it in my pour-over and the clarity was remarkable. Already looking forward to what they do next.
I’m usually not one to buy a coffee twice, but the way this new planting from the Jijon family builds on what they learned from El Soledad is clear in every sip. It’s a second release that feels more refined, and the adaptation really shows in the cup.
