Detta är vår andra utgåva av Fincas del Putushio, en ny plantering från Jose Jijon. Tillsammans med sin far Pepe använde de vad de lärt sig från utvecklingen av Finca El Soledad och anpassade det till en högt belägen gård i en annan region. Genom unika utmaningar och försök ger deras ansträngningar en oerhört ren och elegant kopp.
The second release from this new planting has a sweetness that carries through the whole cup, and the fact it’s a father-son project makes it feel special. I brewed it in my pour-over and the clarity was remarkable. Already looking forward to what they do next.
I’m usually not one to buy a coffee twice, but the way this new planting from the Jijon family builds on what they learned from El Soledad is clear in every sip. It’s a second release that feels more refined, and the adaptation really shows in the cup.
