The cherry note is so bright and jammy it almost tastes like a dessert, but that honey finish keeps it grounded and complex. I brewed it as a pour-over and the winey edge came through exactly as promised. Probably the most interesting bag I’ve had in months.

I wanted to love this one given the anaerobic process, and the winey undertone is definitely there. But the honey finish I kept reading about felt more like a fleeting afterthought than a real presence in the cup. Solid if you're into experimental fermentations, just not a daily driver for me.
