Questa è la nostra seconda uscita di Fincas del Putushio, una nuova piantagione di Jose Jijon. Insieme a suo padre Pepe, hanno applicato ciò che avevano imparato sviluppando Finca El Soledad, adattandolo a una fattoria ad alta quota in una regione diversa. Attraverso sfide e prove uniche, lo sforzo profuso produce una tazza estremamente pulita ed elegante.
The sweetness really comes through in the second pour-over, almost like brown sugar but without any bitterness on the finish. It’s a clean, bright cup that makes me want to dial in my grind size again just to chase that same flavor profile. Definitely a repeat buy for my weekend rotation.
