This naturally processed coffee has become a staple in our Central American offerings and a reflection of our years working with Las Lajas. Today, they process this lot specifically for us, building a profile around the attributes we’ve come to love. Expect notes of pineapple and blueberry with a soft milk chocolate sweetness.
This natural process is so bright and clean, it’s become my morning go-to without fail. The fact that they batch it specifically for us makes that deep, fruity cup feel even more special.
Took a chance on this natural process after reading about their relationship with Las Lajas, and the cup’s got that sweet, fruity brightness I was hoping for. Only gripe is I wish the bag came with a bit more detail on brewing ratios, but the beans themselves are clearly handled with care.
Almost finished my bag and I’m honestly impressed with how clean and sweet the natural process tastes — no funky over-fermentation here. Only knock is the batch I got seemed a touch light on body compared to the last time, but the finish is still lovely and lingering.
