Em colaboração com o seu pai Pepe, aplicaram o que aprenderam no desenvolvimento da Finca El Soledad e adaptaram-no a uma quinta de alta altitude numa região diferente. Através de desafios e provas únicos, o esforço investido resulta numa chávena extremamente limpa e elegante.
