Travaillant avec son père Pepe, ils ont utilisé ce qu'ils avaient appris en développant Finca El Soledad et l'ont adapté à une ferme de haute altitude dans une région différente. The second release from this new planting has a sweetness that carries through the whole cup, and the fact it’s a father-son project makes it feel special. I brewed it in my pour-over and the clarity was remarkable. Already looking forward to what they do next.
